Pumpkin Bread
When I opened my front door earlier this week, I found a surprise package from my friend Shannon (we played soccer together in high school) but now she lives in Maryland.
Look at all the goodies she hooked me up with! Love that girl & miss her! And, she wrote me a handwritten note. So sweet. Thank you Tall Legs!
Kate helped me open the box of goodness & when she saw all the pumpkin goodies she wanted to make pumpkin bread. Since Claire was napping, we got right to baking (of course, Kate had to find her pumpkin hat so she could make pumpkin bread. She cracks me up sometimes)

I know there are hundreds of pumpkin recipes out there.I have tried about 10 different recipes.
I first tried in 2002 and haven't tried any others because I love this one!
It is from our family friend, Beth.
PUMPKIN BREAD
Here is what you need:
1 15 oz can canned pumpkin (I normally use Libby's, it tastes the best)3 c sugar
1 c water
1 c vegetable oil
4 eggs
3 1/3 c flour
1 t baking powder
2 t baking soda
1/2 t nutmeg
2 t cinnamon
3/4 t ground cloves
1 t salt
1 c water

Step One:In a large bowl, combine pumpkin, sugar, water, oil & eggs.


Step Two:Beat until well mixed(I let Kate mix it for fun, but then I used the hand mixer)

Step Three:In a medium bowl, add flour, baking soda, cinnamon, salt, baking powder, nutmeg, cloves.
Step Four:Stir until combined.
Step Five:Slowly add dry ingredients to pumpkin mixture, beating until smooth.
Step Six:Spray 2 9x5 loaf pans with Pam. Evenly divide batter into 2 pans.
Step Seven:Bake for 60-65 minutes at 350
(until toothpick comes out clean)
If you are making muffins, then bake for 25-30 minutes.
Makes 32 muffins (filled 2/3 up)
If you are making mini-loaves it makes 7 mini-loaves (bake for 35-40 minutes)Step Eight:
Let your "helper" play with flour while the bread is baking.
Step Nine:After loaves are done baking, cool for 10-15 minutes.Serve & Enjoy!
While our bread was baking Claire woke up from her nap.
She approves of Pumpkin Bread also! I make this bread every week or every other week. It makes 2 loaves per batch. I made this on Tuesday & both our loaves are already gone. We are carb junkies in this house!

Pumpkin Oatmeal Chocolate Chip Cookies
Happy Thanksgiving Week!
The girls and I have been off school all week.
It has been glorious....no big plans...staying in our pj's most of the day & doing some baking!
In October & November I make tons and tons of things with pumpkin in them, but once December hits, I switch over to Christmas baking mode and I keep the pumpkin on the shelf and replace it with all things Peppermint & Chocolate.
The girls wanted to make cookies this week, so we decided on these ones:

Here is what you need:
- 2 cups flour
- 1 1/3 cups quick or old-fashioned oats
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup (2 sticks) butter
- 1 cup packed brown sugar
- 1 cup granulated sugar
- 1 cup canned pumpkin
- 1 egg
- 1 teaspoon vanilla extract
- 1 bag of chocolate chips
Directions:
Combine flour, oats, baking soda, cinnamon and salt in medium bowl.
Add pumpkin, egg and vanilla extract; mix well.
Bake at 350 for 14-15 minutes or until cookies are lightly browned and set in centers.
They are soft and delicious.
The pumpkin, oatmeal & chocolate chips taste so good together.
All 5 of us love them....Luke even pulled up a chair to the counter and stole 2 of them from the plate when he thought we weren't looking.

Baked Ziti with Pumpkin Sausage Spinach Mushrooms
The weather has finally dipped into the 70's this week and we are getting a glimmer of Fall around here.
I even wore boots for the first time this week! Yay!
Fall weather makes me crave casseroles & warm pasta dishes.
Every Sunday afternoon I do my meal planning for the week & go to the grocery store.
This past weekend we didn't get back from Tahoe until the evening and I was too tired to go to the store, plus the 49ers were playing the Broncos on Sunday Night Football and I wanted to watch the game.
Our fridge was pretty bare, but I had some sausage, mushrooms & fresh spinach.
I always keep pasta in my pantry, so I had a box of that. During the Fall, canned pumpkin is also a staple in my pantry. I decided to get a little creative & make up a recipe.
One of my favorite things to do is to test out different ingredients and make up recipes.
Sometimes they don't turn out so good and sometimes they turn out to be a winner.
This one was a winner! It was delicious.
Baked Ziti {with Pumpkin, Sausage, Spinach + Mushrooms}

Here is what you need:
1 (1lb) box of Pasta
1 lb of Sausage (I use Sweet Italian)
1 can (15 oz) canned Pumpkin
4 cups of fresh spinach
1 can (15 oz) canned Pumpkin
4 cups of fresh spinach
Diced Onion (I use pre-diced because my eyes are so sensitive to chopping onions)
2 teaspoons of garlic powder
1 teaspoon salt
1 cayenne pepper
1 can (12 fl oz) Evaporated Milk. (I used low fat, but you could use non-fat)
2 cups Mozzarella cheese
1/2 cup Parmesan cheese
2 teaspoons of garlic powder

1/2 cup Parmesan cheese
Directions:
{Boil water for your pasta & have your pasta cook while you are making the sauce. Cook pasta according to package directions}
Cut your sausage links into slices.
Cook your sausage & diced onions.
After your sausage is fully cooked, remove the sausage from the pan & set aside. I kept some of the onions & sausage grease in the pan.
In the same pan, add the can of pumpkin, garlic powder, salt & cayenne pepper.
Stir it up.
Then add the can of evaporated milk (you could use half & half, but I didn't have that, so I used evaporated milk!)
Slowly add evaporated milk, stirring until smooth. Cook, stirring occasionally, for 2 to 3 minutes or until mixture begins to thicken slightly.
Then, add the sliced mushrooms to the sauce (if you don't like mushrooms, leave them out...we love mushrooms!)
Then add the sausage back into the pan. Stir & cook over meduim heat for another 2-3 minutes.
Your pasta should be done cooking by now, so in a big bowl, mix the pasta, spinach, sauce & 1 1/2 cups of mozzarella cheese.
Mix it all together so the sauce has coated everything. Put into a 9x13 baking dish.
Add another 1/2 cup of mozzarella cheese & the 1/2 cup of grated Parmesan to the top.
Cover with foil and bake at 350 for 25 minutes. Then for an additional 5-10 minutes bake with out the foil.
This dish turned out delicious! It was full of flavor & not too pumpkin-y at all.
In fact, I didn't even tell Kevin there was pumpkin in the pasta until AFTER he ate dinner & declared it delicious. I think if I told him there was pumpkin in it, he would have been skeptical about eating it. Ha!
Plus, he thinks I over do it with pumpkin during October & November.
What? You can never have too much pumpkin :)
We had pumpkin beer with this meal & it was a yummy combo.
I love it when I can make a meal/recipe out of random things that I have in our fridge/pantry.
I also love that this dish had a lot of veggies in it....pumpkin, fresh spinach & fresh mushrooms!
This dish made a lot of food and it tasted great as leftovers the next day.
