Fiesta Stuffed Bell Peppers


I am SO excited to share this recipe today.
I made up this recipe a couple weeks ago when I was looking through our fridge & pantry trying to use up ingredients that I had on hand.  I had ground turkey & bell peppers I wanted to use. In the pantry I had a box of Mexican rice & salsa.  Bam!
Fiesta Stuffed Bell Peppers were born!
This recipe turned out AMAZING. It is now going to be part of our meal rotation!
Kevin was working late that night, so I saved him some leftovers to have at work for lunch during the week.
Here is a snapshot of our text about them....It was then I knew I had to blog them :)

Here is what you need:
- 1 lb of ground turkey (or ground beef)
- 2 T minced garlic
- 1 T ground cumin
- 1 (16oz) jar of salsa (I use medium)
- Bell Peppers
- 1 box of Mexican/Spainsh Rice
- Shredded Cheddar Cheese


Cook the ground turkey along with 2 T of minced garlic:
While the meat is cooking, at 1 T ground cumin:
I love using THIS utensil for cooking ground meat!
After the meat is done cooking, set aside & cook the Mexican Rice according to package directions:
While your rice is cooking, slice your bell peppers. I slice mine lengthwise:
Get all the seeds out & arrange in a baking dish (I sprayed the dish with cooking spray)
After the rice is done cooking, add the rice, cooked meat & jar of salsa to the pan:
Stir is all together....
Add 1 cup of shredded cheddar cheese to the mixture:
Mix it in & then you are ready add it to the bell peppers:
Side note: The mixture will make about 12 halves. I only made 8 halves & I froze the rest of the mixture.
I used 1 each of red, orange, yellow & green bell pepper, but you could use whichever color you like.
These are so pretty :)
Sprinkle some more cheddar cheese on top:
This helps prevent the mixture from drying out while you bake it.
Bake at 350 for 30-35 minutes.
These were a huge hit...my girls loved them!
These reheated beautifully for leftovers.
Not only are these Fiesta Stuffed Bell Peppers easy to make, they are also healthy, especially if you use ground turkey!
